How Zalud Sake Aperitivo Is Made
Curious how Zalud is made? Our process begins with organic Junmai sake and careful koji fermentation, then finishes with Mediterranean citrus infusion for a crisp, low-alcohol aperitivo.

How It’s Made
Organic Spanish Rice
We are cooperating with Kensho Sake, a top Mediterranean sake brewery, to create the basis of our umami aperitivo. The result is a pure Junmai sake that only uses organic Spanish rice carefully polished to 70% to achieve the perfect flavor balance for our Junmai sake.
Koji and Fermentation
Sake is made from only four ingredients: rice, water, yeast and koji. Koji is the catalyst that turns rice starch into sugar, enabling yeast to naturally ferment it into alcohol — unlocking umami and depth. Brewing sake is a strictly temperature-controlled process that can take several months to develop the sake’s clean, fresh character while enhancing its complexity.
Pure and clean
No added sugar, no sulfites, and completely vegan. ZALUD sake is a crisp, clean, and lighter experience on the body than beer or wine. No additives, just pure, naturally brewed sake with all the benefits of probiotics and antioxidants.
Blended with Mediterranean Essence
Once our sake is filtered and pasteurized, it is gently infused with bold natural ingredients:
– Saffron and orange flavors (Saffron Orange)
– Ginger and lemons (Ginger Lemon)
The result: a refreshing, low-alcohol aperitivo that’s clean, vibrant, and truly unique.

A New Kind of Aperitivo
Born from Japanese tradition and the Mediterranean way of life, ZALUD combines exquisite Junmai Sake with sun-kissed citrus for a drink that’s crisp, modern, and unforgettable.
This page explains how Zalud is made from start to finish. Organic Spanish rice is carefully milled to brew Junmai sake, followed by temperature-controlled koji fermentation for umami depth. After filtration and pasteurization, the aperitivo is infused with Mediterranean citrus and botanicals to create a premium, low-alcohol sake aperitivo that’s crisp and refreshing in a spritz. Naturally gluten-free and crafted without additives, Zalud is designed for gatherings and cocktails.
